Cosy & Comforting Chilli


Ingredients

1 Onion, diced

2 Garlic Cloves, finely chopped

1/2 a Red Pepper finely chopped

1 large Sweet Potato, peeled and diced

3 cups of Vegetable Stock

1 Bay Leaf

2 cans of Green Lentils (drained and rinsed)

1 can of Kidney Beans (drained and rinsed)

1 carton of Passata or 1 tin of Chopped Tomatoes

2 tbsp Chilli Powder (to taste, depends how hot you like it and whether using hot or mild chilli powder) 1/2 tsp Cumin 1/2 tsp Ground Coriander 1/4 tsp Smoked Paprika Pinch of Black Pepper

1 tbsp Cacao Powder or Dark Chocolate

Method

Sautee the pepper, onion and garlic in a little water in a saucepan for 3 minutes (stirring occasionally) Add the chilli powder, paprika, cumin, black pepper and ground coriander, simmer for another minute.

Add the sweet potato, broth and bay leaf, cover and bring to the boil. Reduce the heat once boiling to a simmer and simmer until sweet potatoes are soft and water is reduced (about 10 minutes)

Add the lentils, beans, tomatoes and cacao/chocolate. Simmer over a medium heat until the chilli thickens (12 to 15 minutes)

If a bit watery, simmer uncovered or add a tbsp of tomato paste

Remove the bay leaf before serving. Serve with rice and top with avocado and fresh herbs. Enjoy! Please find nutritional information below; please note this does not include rice or chosen toppings.
