These energy dense cookies are ridiculously easy and fast to whip up, not to mention absolutely scrummy! Ingredients 1 cup of Ground Almonds 1/4 tsp Baking Powder 1/8 tsp Salt 3 tbsp Mashed Banana 2 tbsp Peanut Butter/Almond Butter or Nut butter of your choice 2 tbsp Coconut Oil (Melted) 1/2 tsp Cinnamon 1/4 Cup Raisins/Sultanas
Method Preheat Oven 175C In a mixing bowl combine the ground almonds, baking powder, salt, cinnamon, mashed banana, nut butter and melted coconut oil - they should form a sort of dough. Add the raisins and knead/mix until well combined. The mixture should come together to form a giant ball. Line a baking tray with grease proof paper. Scoop a tablespoon of the mixture out and place onto a baking sheet, you should get around 8-9 scoops. Press the scoops down with your spoon to flatten a little, they should be about 1/4-1/2 inch thick. Bake for 10-15 minutes. Leave to cool on a wire rack; although these are so tasty straight out the oven. We sprinkle ours with a dusting of cinnamon. These will keep for a few days in an airtight container in or out of the fridge. Happy snacking! Nutritional information can be found below; please note that values are using peanut butter.
