THE Tastiest Lasagne

THE most hearty and nourishing Lasagne! Ingredients 1 Onion (finely chopped) 2 Carrots (chopped) 2 sticks of Celery (chopped) 1 carton of Passata (500ml) 1 can of Butter Beans (drained and rinsed) 1 can of Cannellini Beans (drained and rinsed) 2 tbsp Tomato Puree 2 cups of Spinach 1 tbsp Dried Mixed Herbs 12 Dried Lasagne Sheets 1 pint of Milk (we use soya milk) 3 tbsp Vegetable Oil 3 tbsp Plain Flour 1/2 cup Grated Cheese (we use soy cheese) Pinch of Black Pepper Method Preheat the oven to 190C. In a saucepan heat a few tbsp of water and sauté the onion for 3 minutes. Add the carrots and celery, cook for 10 minutes - add more water as required. To the pan add the tomato puree and stir for 1 minute. Next add the passata, butter beans and cannellini beans; simmer for 10 minutes. After the 10 minutes take the pan off the heat and set aside - chuck the chopped spinach in and give a stir. For the white sauce, heat the vegetable oil in a saucepan until it is hot. Take the pan off the heat and add the plain flour and stir into the oil with a whisk; the flour should be well combined but still lumpy. Add a quarter of the milk and mix well to ensure there are no lumps. Add the remaining milk and stir well; return the pan to the heat and stir continuously until the sauce thickens, it shouldn't be too thick, but must be able to pour well. Remove the pan from the heat and add the black pepper - set the pan aside. You will need a large rectangle dish to assemble the lasagne. Start by adding a layer of the passata mixture to the bottom of the dish. Next add a layer of lasagne sheets, followed by another layer of passata. Repeat the layer of lasagne sheets and passata again, finishing with the lasagne sheets on top. Next, pour over all of your white sauce and spread evenly across the dish. Sprinkle your cheese on top. Bake in the oven for 30-40 minutes, until golden on the top. Serve with a salad, chopped avocado and fresh herbs. Enjoy! Please find nutritional values below.
