Tofu Scramble

This Tofu Scramble is perfect for slow and relaxed mornings.

Ingredients 1 pack of Extra- Firm Tofu

1 Red Onion finely chopped

2 Garlic Cloves finely chopped

3 Mushrooms finely chopped

1 grated Carrot

3 tbsp Jalapeños finely chopped

1 cup of Spinach finely chopped

1/2 tsp Garlic Powder

1/2 Ground Cumin 1/4 tsp Chilli Powder (or more if you like it spicy)

1/4 tsp Turmeric


In a frying pan over a medium heat add the onion, garlic, mushrooms, carrot, jalapeños with just enough water to sauté for 4 minutes. Add all the spices, garlic powder, cumin, chilli powder, turmeric to the pan and mix well, add a little more water if needed to stop burning and sticking and cook for a few more minutes until all veggies have softened.

With a fork, crumble the tofu, then add to the pan and mix well, cook for about 5 to 8 minutes. Be sure to keep stirring it so as not to burn or stick, you may have to add a little water again.

Serve with whatever you desire, I had mine with avocado toast, and I topped my scrambled tofu with chopped parsley, black pepper and hot sauce!

If you don’t like tofu then substitute for eggs, but this is incredibly delicious!
